πŸ“I was delighted when Mr. Herminio Esguerra, himself the humble and outstanding owner warmly welcomed us. Mr. Esguerra joined us on the coaster as we toured the entire farm, where he shared his story of how he came up with the idea of establishing the farm and the inspiration that turned Esguerra Farm into an amazing place, him being hands-on everything.

πŸ“ He started as horse breeder then later on expanded on raising purebred Kurobuta, the heritage black pig of Berkshire, imported from the United Kingdom. Now, Esguerra Farms boasts a variety of livestocks, sheep, goats, chickens, ducks, tilapia and catfish among others. Various fruit-bearing trees, like avocados, mangoes, and mangosteen, thrive on the farm, complemented by dedicated plots for cultivating a variety of vegetables.

πŸ“ Kurobuta sets itself apart, resembling pork but possessing beef-like characteristics. The marbling in its meat creates the look of tomahawk, coppa, and ribeye cuts, resulting in delectable steaks with minimal seasoning. On the other hand, conventional pork lacks the necessary tenderness and flavor for such delightful preparations. Esguerra Kurobuta is free from harmful chemicals, making it safe for human consumption. Opting for healthy food is a preventive measure that is superior to curing potential health issues.

πŸ“ Heritage pork is raised with great care, following a natural and stress-free approach that avoids the use of commercial antibiotics and synthetic growth hormones. The pigs are allowed to roam freely in pastures, where they can bask in sunlight, breathe fresh air, and have plenty of space to move around, similar to the practices used for raising wagyu. This meticulous process guarantees their meat stays juicy, tender, and although relatively expensive, for true pork enthusiasts, savoring each succulent bite of heritage pork becomes a truly remarkable experience.

πŸ“ It was a delightful and unforgettable dining experience. We were served with crisp, succulent falls-off-the-bone cochinillo, a grazing board, roasted Peking duck, salpicao, lamb, Kurobuta Pork Coppa Steak, barbecue, porchetta, freshly grilled tilapia, balut, salad, fruit salad for dessert, and overflowing juice that we truly enjoyed.
